Smith Chicken Casserole

Chicken Casserole

Ingredients
2 cups cooked chicken, cubed
1 cup uncooked quick rice
1 cup chopped celery
3 hardboiled eggs, diced
3/4 cup mayonnaise
1 cup cream of chicken soup (10 oz can)
1 tbsp lemon juice
1 small onion, chopped
salt to taste
Cornflakes, potato chips, or bread crumbs on the top
(usually I process 2 pieces of bread in the food processor)

Directions
Mix all ingredients and place in 9” x 13 “ baking dish, and cook at 375 for 35 - 40 minutes.
